1 pint (2 cups) strawberries
1 rounded tablespoon orange juice concentrate
32oz container vanilla yogurt plus a little more
(I use 4-6 8oz. yogurt containers depending on what I have and the size
of the pie pan.)
Drain yogurt and save whey for pancakes.
Puree 1 1/2 cups of strawberries (I often use frozen) in a blender or
mince finely.
Mix together yourt cheese, orange juice and and strawberries.
Cut the remaining 1/2 cup of strawberries in small pieces and mix in.
Test for sweetness and adjust if needed.
Spoon into pie pan. Cover and freeze until firm, at least 2 - 3 hours. To
serve let stand at room temperature to soften a little. Some people like
it a little more frozen than others.
