The first hot days of summer always make me hungry for this salad - I've
posted it in the past and here it is again:
Dice the following into smallish chunks:
1 large red pepper
1 large yellow pepper or 1 cup frozen corn kernals
3-4 medium kirby cucumbers
3 large stalks celery
1/4 cup diced onion
Mix the following together and pour over veggies:
1/2 cup cider vinegar
1/4 cup water
1/2 tsp salt
1 Tbs dijon mustard
2 Tbs honey or 3 Tbs sugar
1/4 c chopped parsley
ground pepper to taste
Serve cold. Keeps in fridge aver a week.
