Curried Brown Rice Salad
1/2 pintwater
Salt
8oz long grain brown rice
1 onion chopped finely
1 tsp ground cumin
3 tsp curry powder
3 fl oz orange juice
3 oz no-saok dried apricots chopped
2 oz raisins or sultanas (golden raisins)
Bring water and salt to the boil
Add rice and cover pan, simmer for about 40 mins, until water is
absorbed and rice is tender
Cook onion for about 3/4 mins in your chosen method of "frying" (spray
low fat or broth etc)
Add cumin and curry powder and cook for further 2 mins
Pour in orange juice and simmer for 1 minute
Remove from heat
Place rice in a large bowl and stir in the warm sauce, mix well
Add apricots and raisins or sultanas and season to taste with salt and
pepper
Cover and allow to stand for 2 hours to allow the flavours to develop
