TODAY'S RECIPE: GINGER TEA--VEGAN
This is my favorite tea--in fact, I am drinking it as I type this. It
has a strikingly sharp flavor and is extraordinarily refreshing. A cup
of this each day will do wonders for your health. Holistic folks point
to ginger's ability to stimulate digestion and boost circulation,
respiration, and nervous system functions. Increasing your circulation
helps cleanse your skin, bowels, and kidneys. Some also think it is
excellent for treating colds.
Gingerroot--sliced in nickel-thick sized rounds
Lemon juice
Water
Fill a saucepan with enough water to fill your desired cup size one
and a half times.
Measures here are approximate, but for a large cup add about 15-20
slices of ginger, double for two cups.
Bring the water and ginger to a vigorous boil and keep boiling for
about 5 minutes. Lower heat and simmer for at least 45 minutes--longer
if you have the time. I start the tea boiling when I get home and
serve it after dinner.
Strain the tea into cups and squirt an entire lemon (if you're using
large cups) into each.
Some folks like to add honey to sweeten the tea.
