Great Aunt Julia's Dilled Cukes*
2 1/2 quarts water
1 pint vinegar
1/2 cup pickling salt
1/2 tsp. alum
chili peppers (dried)
garlic cloves
dill
Sterilize jars. To each add 1 chili pepper, 1 clove garlic and a sprig of
dill. Stuff jars with cucumbers that have been washed and
pricked with a fork.
Bring water, vinegar, salt and alum to a full rolling boil. Pour into jars,
leaving 1/4 inch head space. Seal immediately and set in a
pan of very hot water, overnight. Store in a cool, dry location.
* This recipe can also be used with carrots and green or yellow beans. (I
usually blanche these til tender-crisp before placing in
jars.)
