Here are two favorite pizza crusts, one whole wheat and the other light =
whole wheat:
#1 Whole Wheat Pizza Crust in Bread Machine: time: 1 1/2 hrs or can =
pull it out after first rise, about 1 hr
1 2/3 cups warm water
4 cups whole wheat flour
1/4 t black pepper
2 t salt
2 t active dry yeast (1 packet)
My bread maker likes the water first, then flour and spices, then yeast =
in
a hole in the top of the flour.
Check your bread maker, and put ingredients in the order it wants.
Roll it out on board dusted with corn meal.=20
This amount makes two full size pizzas rolled out thin, with some extra
trimmed off and baked with garlic salt for snacking. =20
#2 Light Whole Wheat pizza crust, adapted from this list
1 T Sugar or honey=20
1 1/4 c Warm water as above=20
1 T or 1 Envelope yeast=20
1 1/4 c Unbleached all-purpose flour=20
2 c Whole-wheat flour=20
1 t Salt=20
2 T fat replacer such as applesauce or other pureed fruit or=20
commercial fat replacer. I even use date jam and it's great. =
