Otto, my favourite thing to do with eggplant is to roast it whole in the
oven (takes about 40 mins at a moderate temperature) and roast a whole clove
of garlic at the same time.
Then mix them together and leave to cool. Sprinkle with paprika and a little
pepper before serving
This makes a delicious babaganoush type dip. I love it with carrot sticks,
pieces of capsicum and celery
