I was just chatting with one of our fellow listers, and the subject of
peaches and pot luck came up. So, I thought I'd share my secret
knock-em-out-of-their-sox peach cobbler elite with all of you. :-) You can
use fresh or canned peaches, although fresh are excellent this time of the
year.

NO-SOX PEACH COBBLER ELITE
8 cups fresh peaches, peeled, seeded, and sliced
1 cup sugar (less to taste if peaches are very sweet)
1 cup water
2 tbsp cornstarch
1 tsp ground cinnamon
Mix above ingredients in saucepan and cook until thickened. Pour into a 3
quart baking dish or a 9 X 13 cake pan. Set aside.
In a large bowl, mix 2 cups fat free baking mix such as "No Fat Pioneer" (or
your favorite fat free biscuit recipe of choice) with enough skim milk
(approx 1/2 to 3/4 cup) to make a dough that clings together. Turn dough out
onto a floured surface and knead a few times to form a ball. Roll into a
12x8 rectangle, spritz VERY lightly with Pam cooking spray, and then spread
with the following topping. (The slightest mist of Pam doesn't add fat grams,
but does give the cinnamon sugar mixture something to cling to when rolling
up the dough)
1/4 cup brown sugar
1/2 tsp cinnamon
Roll up from the long side, and slice into twelve 1 inch thick slices.
Arrange slices on top of the hot peaches, and bake, uncovered in a 400 degree
oven for 25 to 30 minutes until golden brown.
Serve warm or cold, and believe me, you'll get major compliments!! :-)
