Quinoa and Black Bean Salad

Amount Measure Ingredient -- Preparation Method

1 1/2 cups quinoa
3 cups water
1 1/2 cups cooked black beans
1 1/2 tbs red wine vinegar
1 1/2 cups corn, frozen
3/4 cup green pepper -- finely chopped
2 green chiles -- minced
1/4 cup cilantro -- finely chopped
DRESSING:
5 tbs lime juice
1 tsp salt
1 1/4 tsp cumin
-rinse quinoa in several changes of cold water to remove bitter coating
-cook quinoa in water for 15-20 minutes, or until all water is absorbed.
-in a smalll bowl toss beans with vinegar and salt to taste
-transfer quinoa to a large bowl and let cool. Add beans, corn, pepper,
chilies, and cilantro and toss well.
Mix dressing ingredients in small jar, shake well to mix, drizzle over salad
and toss well
