These are delicious and you can vary the ingredients by what fruit is in
season
ingredients (makes about twelve)
1.5 cups white self-raising flour
0.5 cups wholemeal flour
0.5 cup cocoa
1 or 2 bananas
1 or 2 sweet pears
4 kiwi fruits or 3 plums or a mango (basically you can use any fruit - it
just makes them really moist)
approx .5 cup of soy milk (no fat) or orange juice
1 cup chopped dates
1 teaspoon vanilla essence (optional)
icing
1 - 2 cups boiling water
1/2 cup chopped dates
1-2 tablespoons cocoa
METHOD - MUFFINS
preheat oven to about 180degrees celsius
In a mixing bowel add banana, peeled and chopped pears and other fruit. Mix
with a hand mixer until runny. Then add sifted flour and cocoa and mix by
hand. Add enough milk or orange juice to make mixture smooth but not runny.
Add dates and vanilla essence by and stir.
Put in muffin tray and bake for about 45minutes - skewer will not come out
clean, b/c fruit makes muffins very moist and soft.
Allow to cool if can be bothered
To make icing:
simply add boiled water, cocoa and dates and stir over heat til fairly soft.
May need to add quite a bit of water - depends how sweet you want it.
ice generously!

ps I think they taste best microwaved for about 40secs before eating.
