These pancakes are so easy to make, and so good!
1 cup flour
1 cup nonfat milk
1 tablespoon fat substitute (applesauce, nonfat yogurt, etc.)
1 tablespoon baking powder
Mix the flour and baking powder in a bowl. Combine milk and fat substitute,
whip with a fork for one minute (it should start to get foamy.) Pour milk
mixture into flour mixture, stir together, and don't worry about lumps. Pour
1/4 cup batter onto a griddle over medium-high heat, when bubbles appear,
flip onto other side. Serve with maple syrup!
PS. If you like thinner, larger pancakes, (as I do!) add more milk, up to 1/2 a
cup.
