Bagels, serves 12

1 pkg active dry yeast
1/3 cup warm water
1 tspn salt
4 cups flour
1 tbspn sugar
1 cup non fat milk/soy milk
egg beaten with water as a glaze
poppy seeds

Sprinkle yeast over warm water, stir and dissolve. put salt and flour and 1/2 tbsn sugar into food processor. Pulse mix (airates it) combine yeast mix and milk in measuring cup, while blender is going pour in mix. Knead until mixture balls together and no longer sticky, about a minute or two, lightly flour a large plastic bag, place in dough and squeeze out air. close end. let dough rise until doubled, about an hour, punch it down, let rest 10 mins. pull off pieces and roll 12 2 inch balls. poke hole in each ball with finger, shape bagel evenly. place all on tray or cookie sheet and let rise till puffy for a further 30 mins. preheat oven to 400F, bring a very large pot of water to boil, add remaining sugar, poach bagels, 3 at a time, for about 30 seconds, turn and poch for another 30 seconds. remove and drip dry on paper towels. then place i inch apart on baing sheets. brush each bagel with glaze and sprinkle with poppy seeds, bake until golden, about 15-20 mins, let cool on racks. yum!!
