Want a fast, fat-free soup that even the
fussiest non-veggie type will eat?
1-1/2 quarts water
2 sticks celery, chopped (1" is fine)
2 carrots, chopped as above
1 medium onion chopped
1 - 2 cloves garlic, crushed or minced
1 to 2 ounces angel hair pasta broken
into 1" pieces
1 can drained and washed pinto beans
Take everything, toss it into a pressure
cooker and cook for 15 minutes or bring
to a boil in regular covered pan and let
cook for 45 minutes.
Salt and pepper to taste...serves around
four.
HINT: Let it cool in refrigerator for a
few hours. Then add some water (if
needed) and reheat. The starch from the
pasta will thicken the soup a bit giving
it a nice smooth texture that will feel
as though f*t was there.
