Unless you are using agar (kanten), a gelatin made from seaweed, then the recipe
is not vegetarian. Here are some egg substitutes that are vegan:
Sub for three egg whites: 1/4 cupground flax seeds blended in 3/4 cup water
Whole eggs: tablespoon ground flax seed
tablespoon soy or rice milk
gluten flour or arrowroot to thicken
