6 Potatoes
1 onion
4 egg whites
1/4 cup flour
salt & pepper
Shred scrubbed, unpeeled potatoes (russet are nice). Rinse excess starch
off potatoes. Squeeze dry. Add chopped onion, egg whites, flour, salt,
pepper. Mix. Place latkes on a hot, very lightly oiled non-stick
skillet. Cover. Cook till browned on one side. Turn. Cover and cooked
until done.
Note: These are a great family recipe. I double, triple the recipe as
needed.
