Mango Salsa

1 large mango, ripe, peeled and cut into small chunks
1-2 slices purple onion, chopped
1/8-1/4 green pepper, finely chopped (add more if you like them, I don't but
do like the little tang they add)
2-6 pepperocini sliced
1/4 cup lime juice
2 tsp sugar (to taste...if mangos are very ripe you won't need it)
1/2 cup or so fresh cilantro

If you don't have lime juice you can use the juice from the pepperocini. I
usually use that in a pinch.

Mix everything together and let sit at least one hour...overnight is even
better.

Serve with fresh, homemade tortilla chips.
