For Courtney - Here's my favorite lentil soup. If you don't have a pressure
cooker, use about 1 cup more water and cook on top of the stove for about
1 - 1 1/2 hours.
PRESSURE COOKER LENTIL SOUP
2 onions, chopped (@ 8 oz.)
2 stalks of celery, chopped
3 carrots, chopped (@ 12 oz.)
4 cloves garlic, minced
2-3 sprigs of parsley, minced
1 cup sliced mushrooms (canned OK)
1 cayenne pepper, ground (or 1/8 tsp. ground)
1 tsp. Ital. Herb blend, crushed
2 cups lentil, washed and picked over
1 small potato, peel and dice
2 cups Ital. crushed tomatoes in puree
2 Tbs. broth powder or 2 cubes
8 cups water
1 Tbs. soy sauce or Worcestershire sauce
1 Tbs. Balsamic vinegar
Put all ingredients in cooker except soy sauce and Balsamic vinegar and
pressure for 25 minutes. Let stand 20 minutes before reducing pressure. Add
1 Tbs. soy Sauce or 1 Tbs. Worcestershire Sauce, and 1 Tbs. Balsamic
vinegar.
Options: 1. Add 2 tsp. fresh lemon juice instead of Balsamic vinegar
2. Omit Worcestershire or Soy Sauce. Add hot soup liquid to 2
Tbs. miso. Cream together and add to soup stirring well.
3. Can also puree in Food Processor.
4. Can add 1/4 to 1/5 pkg. of GimmeLean Sausage Style at end.
Hope you all enjoy. Don't let the long list of ingredients scare you. They
are mostly seasonings and if you don't have one, substitute or omit.
