Tarragon Potato Salad ( 4 servings)
Scrub, do not peel, and simmer until tender but firm, about 10-20 minutes:
1 1/2 lbs. small new potatoes
Wash, dry, and chop in Cuisinart:
Fresh dill to yield 2 T chopped
Fresh parsley to yield 2 T chopped
1 T + 1 t capers
In a bowl large enough to hold all the ingredients, combine:
Chopped herbs and capers
1/3 c non-fat sour cream
1/4 c non-fat yogurt
1T + 1 t tarragon vinegar
Few grains cayenne pepper
Few grains salt
Freshly ground black pepper
Drain potatoes, cut into quarters and toss with dressing.
