Summer Salads

With summer and warm weather approaching I am more in the mood for salads.  Does anyone have any interesting salads they would like to share?  I made a nice one the other night.  It went something like this:

Curried Lentil Salad
1 cup cooked lentils
1 cup shredded carrots
1/2 cup
1/2 cup raisins
1/2 cup diced celery

Dressing of vinegar, broth, and curry powder

Combine and chill
