Garlic Garabanzo Soup
1 15 oz can Garabanzo beans
1 med or lg onion
3 cloves garlic*
1/4 t salt*
1/8 t fresh ground pepper*
1/4 c sherry*
*(more or less according to your tastes)
Chop onion & mince garlic. Stir simmer the onion & garlic with water until
caramelized. Add enough water to deglaze the pan.
Put garabanzo beans (do not drain) into a food processor and puree. Add
cooked onion & garlic and puree. Pour the whole collection into a sauce
pan and simmer. Add salt, pepper, & sherry. When flavors have melded,
ladle out a cupful of delicious comfort food. This recipes can be doubled
and freezes well. I am a weekend cook who makes potfuls of soup, portions
them into serving sizes and freezes them for lunches at work during the
week. This is a hearty soup with a rich flavor and NO added fat.
Black Bean & Tomato Soup
1 lg. can black beans -or- 3 c cooked black beans with cooking liquid
1 lg. can diced tomatoes with juice
1/2 t cardomon
1/2 t coriander
1/2 t cumin
1/2 t tumeric
1 med onion (chopped)
salt & pepper to taste
dash of balsamic vinegar
Stir simmer the chopped onion until caramelized, add spices, simmer,
deglaze with water.
Puree half of black beans, leave rest whole.
Place pureed beans, whole beans, tomatoes, onion & spices into pot. Simmer
until flavors meld. Add salt, pepper & vinegar.
This soup also freezes well.
