San Antonio and other Texas vegetarian eateries?

We are going to San Antonio, Corpus Christi, Austin, and Fredricksburg
in April. Does anyone have any tips for fat-free or very-low-fat
offerings at restaurants in these cities?

Any other suggestions for vegetarians in the Texas hill country and
coast?
