I am also missing the recipes. Here goes:
For Monica who wants new recipes, this is what we had yesterday:
I sliced an eggplant lengthwise (scrubbed it and left the skin on for extra
fiber) and put it in a casserole dish sprayed with PAM's equiv. and then
piled on the following: mushrooms (fresh and scrubbed)
chopped bell peppers (fresh and scrubbed)
fat-free pasta/spaghetti sauce
a little water
Then I baked it for an hour at 325 degrees. It was very good. We had it
with french bread and tossed salad.
