Monica, thanks for the reminder. In response to your request, below is a
recipe for a summer favorite in our house, Cascadilla. It is our preferred
alternative to gazpacho.
The archives also include recipes I've posted for two other delicious
chilled soups, cauliflower-soup-2 and chilled-cucumber-yogurt-soup.
Throughout the warm/hot seasons one (or more!) of the three chilled soups
is always in the refrigerator. The cucumber soup is lighter than cascadilla
and may be drunk from a cup or glass; the cascadilla is a little thicker,
and the cauliflower soup is of the texture of vichysoisse and is vegan.
Besides being wonderfully refreshing, all three soups are low in energy
density (less than 50 calories per 8 oz. serving).
CASCADILLA (adapted from Moosewood Cookbook, p. 19)
1 c. diced cucumber
1 c. diced green or yellow pepper
1 clove garlic, crushed or finely minced
1 tsp. honey
½ tsp. dill weed
4 c. tomato juice
1 c. nonfat yogurt
salt and pepper to taste
Add yogurt to tomato juice and stir to mix well. Add the other ingredients.
Chill.
