Hoppin' Jose

Hello,

I still am only getting a message or two every week or so. Is everyone having a slow time on the digest?

My dinner last night was this recipe from "The Convenient Vegetarian" by Virginia Messina and Kate Shulman. It was sooo easy and a big hit. I heated it in the microwave and served it with low-fat flour tortillas to roll it in and topped with more salsa. Yummy! I made a chopped fruit salad for dessert with 2 red grapefruits, 1 granny smith apple, and some halved green grapes which I dressed with a tablespoon of honey and 2 tablespoons of rose water and a sprinkling of cardamom. It didn't really need the honey so if you don't partake of honey, leave it out or leave the dressing off the salad entirely, it just tastes very nice with it!


Hoppin' Jose
4 servings

One (15 oz) can black beans, drained, or 2 cups cooked, drained
2 cups cooked brown or white rice
1/2 cup finely chopped mild red onion
1 cup medium salsa (I used mild)
One (4 oz) can diced green chiles or 1/4 cup diced fresh (didn't have any and it was still good!)
1/2 cup chopped scallions (green onions), including green portion

Preheat oven to 350 F, if using.

In a medium bowl, toss beans, rice, red onion, salsa, and chiles.
Place in a 1-quart ovenproof or microwavable casserole.
Bake 25 minutes or microwave on high 2 to 3 minutes.
Top with scallions just before serving.
