Here is a hearty, low fat soup by Mark Bittman of the New York Times. According to my MasterCook, with home made vegetable stock, each serving has 427 calories and 8 grams of fat (12%). You can reduce that even further by reducing or eliminated the olive oil and using water instead of the stock. Meat eaters will find it hard to believe that there is no beef in it.
