Adzuki Bean Salad with Tofu
One 15-ounce can adzuki beans, drained and rinsed
1/2 cup chopped red onion
1 green bell pepper, seeded and chopped
1 celery stalk with leaves, diced
1/2 cup rice vinegar
Pinch of salt
Pinch of pepper
1/2 teaspoon dried cilantro
1 cup diced firm tofu
Combine all ingredients except tofu; blend well. Gently stir in tofu.
Marinate at room temperature for 30 min or in refrigerator for an hour or
more. Can be made a day ahead and refrigerated. 6 servings.
