We've been making this for several years, I think it's an original, however,
who knows - I read so many recipes, it could be subconcously plagiarized:
Black Bean Salad (Main Dish)
1 16 ounce can black beans, drained and rinsed
1 bunch cilantro, chopped
1/2 cup sweet onion (vidalia is wonderful, however out of season red will do)
1 red bell pepper, chopped
1 cup corn kernels (frozen are fine)
juice from 5 juicy limes
freshly ground black pepper
Mango, peeled and sliced (garnish)
Mix all ingredients except mango. Chill for at least 2 hours or overnight.
Serve on warmed no fat or low fat corn tortillas and a great salsa (we crave
Arriba Chipolte Salsa). Garnish with mango.
Great to make and serve in a Chicago heat wave (like this weekend).
