The bean salad is a reworking of a recipe from Carol Gelles' _The
Complete Whole Grain Cookbook_
Black-White-and-Red Salad (with a Touch of Green)
1 can (19 oz.) cannellini or navy beans, drained
1 1/2 cups cooked and cooled wild rice
1 cup chopped red bell pepper
1/4 cup sliced scallion, both white and green parts
2 Tbs. cider vinegar
2 Tbs. lemon juice
4 tsp. spicy brown mustard
1 1/2 Tbs. water
1 clove garlic, minced
1/2 tsp. salt
1/8 tsp. pepper
In a large bowl, toss together the beans, wild rice, red bell pepper, and
scallion.
In a small bowl, stir together the remaining ingredients. Pour over wild rice
mixture and toss gently until completely combined.
