Here's a tasty recipe you may enjoy. It calls for soybeans but I use
chickpeas. I also eliminate the tomatoes (don't care much for fresh
tomatoes) and use somewhat less onion (love onion but it was
overpowering to me in this recipe). Sorry I can't tell you exactly
where it's from but I can't quite read my SO's grandmother's

Chickpea [Soybean] Salad
1 cup cooked chickpeas [soybeans]
French dressing [I used Ayla Organics fat free (vegan)]
1 dessert apple [I just used red or golden delicious]
2 small sticks celery
1 medium onion
2-3 tomatoes
lemon juice
parsley
Drain the beans well and toss in dressing. Peel and chop the apple, wash
and chop the celery and slice the onion thinly. Mix all together and add
lemon juice to taste. Arrange sliced tomatoes on top and garnish with
chopped parsley.
