Fast & Easy bean Salad
I whipped this up one evening in a fit of bordom. My SAD wifs liked it
so much sh made me write the recipe down :)
1 can black beans
1 can navy beans
1 can red beans
1 small onion, chopped finely
1 stalk celery, finely chopped
1/2 tsp garlic powder (or 3 cloved garlic, chopped or pressed)
1/2 cup fat free italian salad dressing
1 Tbsp lime juice
1/4 cup fat free parmesian cheese (or omit for vegan)
salt & pepper to taste
Rinse and drain beans. Mix all ingredients in a large bowl. Let stand
at least an hour before serving - more is better!
For camping, this will keep easily for several days in a cooler.
