I promise, this is really good. I've even fed it to a lentil
hater with success.
Chilled Lentil & Rice Salad
dry lentils cooked & drained of all liquid; 2 cups cooked
Rice cooked; 3 cups cooked
1 large onion chopped very finely
1 bell pepper chopped very finely
6 oz. fat free Italian dressing
2 oz. white vinegar
salt and pepper to taste
Mix all the ingredients together and best if chilled over night. Serve
chilled.
