Texas Caviar
3 cups Black Eyed peas
1 red bell pepper chopped
1 green bell pepper chopped
1 jalapenos pepper seeded and deveined chopped
1/2 cup sweet onion chopped (Vidalia)
1/2 cup Red onion chopped
2 stalks celery chopped
2 cloves chopped garlic
1/4 cup cilantro chopped
1/4 cup parsley chopped
1/4 cup fatfree Balsamic Vinaigrette dressing
fresh ground pepper and salt to taste
add all ingredients in a bowl toss and chill
any variety peppers may be used the more colors the better so if you can
find yellow orange and purple peppers feel free to uses them.
