Here's another dish I threw together for dinner. The "Surprise" is, I
guess, that the combination of seasonings worked out pretty well. Feel
free to adjust for your taste, of course. (As you may guess from my
postings I really like garlic. :) )
Chickpea Spinach Surprise
1 lb frozen spinach
1 15 oz can chickpeas, drained and rinsed
1 small onion, finely chopped
8 to 10 cloves garlic, minced
2 tbl lemon juice
4 tbl water
2 tsp dill seed
1 tsp dried basil
1 tsp dried oregano
1/2 tsp black pepper
Cook the spinach according to package directions. Meanwhile saute the
onion, garlic, and seasonings in the lemon juice and water. Stir in the
cooked spinach and chickpeas. Serve.
