We had this last week. Light and tasty!
Lima Beans with Zucchini (serves 6*)
few T. sauteing liquid
2 garlic cloves, finely minced
1 med. onion, finely chopped
1/2 c. dry white wine
1/2 lb. large plum tomatoes, coarsely chopped
1 T. tomato paste
salt and freshly ground pepper
1 10-oz. package frozen baby lima beans, thawed (or equivalent fresh beans)
1/2 T. finely minced fresh rosemary, or 1 tsp. dried
1 large zucchini (abt. 1/4 lb.), julienned
1 T. LF/FF grated parmesan
In large non-stick skillet, saute garlic and onion for 4-5 min. Stir in
wine, tomato, tomato paste, salt and pepper to taste. Add lima beans and
rosemary. Cover and simmer 5 minutes. Add zucchini, cover and simmer 5
minutes. Place in serving dish and sprinkle with parmesan cheese.
