Red Beans in Wine

1 1/2 cups (375ml) red kidney beans, soaked
1 tablespoon sauteing fluid
1 onion, chopped
2 cloves garlic, chopped
1 small red pepper, seeded and sliced
1 cup (250ml) full bodied red wine
1 tablespoon tomato paste
bayleaf, salt and pepper
Cook the beans for 20-30 minutes in unsalted water until just tender.
Drain. Pre-heat oven to 350F (180C). Saute the onion, garlic and pepper
until soft. Add the beans, wine, tomato paste and bay leaf. Season will
salt and pepper. Transfer to an ovenproof dish, cover and bake for 45
minutes. Serve hot.
