DIET CORNELL BREAD
(This low-rising whole grain bread is based on a formula devised for
superior nutrition in bread by faculty at Cornell University.) From
Donna German's Bread Machine Cookbook IV.
1 1/8 cups water
1 1/2 tablespoons miso
1 1/2 tablespoons honey
2 1/3 tablespoons wheat germ
1 1/2 - 3 tablespoons vital gluten, optional
1/4 cup soy flour
3 cups whole wheat flour
1/4 cup nonfat dry milk
2 tsp. yeast
setting: whole wheat
Nutritional analysis per 1 oz. slice: 74.2 calories, 0.6 g fat, 4.0 g
protein, 14.2 g carbohydrate, 0.3 mg cholesterol, 117 mg sodium
