dirks-dense-oatmeal-bread recipe

We just made a yummy loaf of very dense, somewhat ugly
oatmeal bread that had a nice, chewy texture to it-- about as
opposite of Wonder bread as you can get ;-)  To make the oatmeal
flour, just whir oatmeal in a blender or food processor until it is fine
(its ok if there are a few larger pieces left). 

This made a 2 lb loaf in a breadmaker, though it was half the size of
a "normal" loaf, and the top fell in a little. But it was baked all the way
through, and was delicious, especially with a touch of honey in the
morning. We may experiment around with using a little wheat gluten
to keep it from falling, but I suspect it will lose the nice texture. We 
may also try just making the dough int he machine, and baking a nice
round loaf in the oven next time, too.

Anyway, here's the recipe for a 2 lb loaf in a bread machine:

Dirk's Dense Oatmeal Bread (T)

1 1/2 c. water
1 1/2 c. bread flour (white flour labelled "better for bread")
1 c. whole wheat flour
1 1/2 c. oatmeal flour
1/4 c. molasses
1 1/2 tsp salt
1 T yeast

Add the ingredients on order listed, and use the whole wheat cycle on the
machine.
