I have been tinkering with machine breads, and came up with this very
high-fiber, fatfree, delicious bread:
MACHINE FIBER BREAD
1 1/2 Loaf:
2 1/4 tsp active dry yeast
1/4 C rye flour
1 C bread Flour
2 C whole-Wheat Flour
1 tbsp gluten flour
1 tbsp oat bran
1 tbsp oats
2 tbsp flax seeds
2 tbsp wheat bran
2 tbsp dry milk
1 1/2 tsp salt
1 tbsp honey
2 tbsp prune puree, or applesauce, or mashed
banana 1 1/4 C water
Add all ingredients in the order suggested by your bread machine manual
and process on the basic bread cycle according to the manufacturer's
directions.
This bread has nice nutty flavor, thanks to the flax seeds. It is good
enough to be eaten plain, but sometimes I make a banana sandwich: slice
a banana leghtwise, place on a slice of bread, sprikle some cinnamon and
place anothor slice of bread on top. Great with a nice cup of coffee or
tea!
