No-Fat Apple Butter Raisin Bread
1 cup apple butter
6 egg whites, beaten frothy
1/2 cup skim milk
3 cups all-purpose flour
3-1/2 teaspoons baking powder
3/4 teaspoon salt
1 teaspoon cinnamon
1 teaspoon nutmeg
1 cup raisins or 3/4 cup currants
Combine apple butter, egg whites and milk. Blend. Sift dry ingredients
together into a large mixing bowl. Add apple butter mixture. Stir only
until flour is completely moistened. Add raisins or currants.
Bake in two 7-3/8 x 3-5/8's x 2-1/4 inch baking pans lightly sprayed w/
cooking spray. Flour pans.
Bake at 350 degrees for 30 minutes.
When removing from oven, immediately spray top *lightly* with cooking spray.
Combine 3 tablespoons powdered sugar and 1 teaspoon cinnamon. Sift on top of
each loaf.
For a dessert or tea bread, spread each slice with additional apple butter.
