Until now, I've been unconvinced about ff baking...I've found it to be
chewy, dense, and generally unpleasant-tasting. This is what changed
my mind... banana bread. I combined ideas from the list (baby food
prunes) with Moosewood's recipe (calls for over a cup of butter), and
came up with great results.
This recipe could esily be adapted to pumpkin bread, zucchini bread,
etc...maybe even that persimmon bread I've heard about recently!

BANANA BREAD
Dry ingredients:
2 c flour
1/2 t salt
1/4 t baking soda
1/2 T baking powder
1 t cinnamon
dash of allspice
Wet ingredients:
4 ripe bananas, mashed
2 jars of baby food prunes
1/2 c. brown sugar, packed (you could use less)
juice of one lemon
zest of 1/2 a lemon (you could use more)
2 egg substitutes, beaten (I used egg-beaters)
1 1/2 t vanilla
Optional additions:
raisins
dried cherries
Preheat oven to 350. In a large bowl, mix dry ingredients. Combine wet
ingredients thoroughly, add to dry ingredients. Mix until evenly moistened
(do not overmix). Spread batter into a loaf pan that has been prepared with
oil spray. Bake 45-50 minutes till a knife inserted comes clean. Let cool
in pan 10 minutes, then cool completely on a rack.
