Here's a recipe I obtained in England where I was *always* chilled.
Serve it warm with a hot tea or coffee for dessert.
Kay's Mom's Teabread
12oz self rising flour (or normal flour with 1 to 11/2 tsp baking
powder)
12oz regular tea
2 egg whites or sub to equal 1egg
1lb chopped mixed fruit of raisins
generous shake of cinnamon
1/8 tsp each ginger and allspice
Soak the raisins or chopped dried fruit in the tea overnight. Stir in egg
whites, flour and spices when ready to bake.
Pour into a sprayed loaf pan, and bake at 350 F (Kay's Mom says 'gas mark
4!) for 1hr.
The fruit loaf is really sweet and moist with all the fruit, and has a
great sticky muffin consistancy. It seemed to be warming, soothing, and of
course guilt-free!
