Pumpkin Mini-loaf
1/2 c. canned pumpkin
2 T water
1/2 tsp vanilla
1/3 c. powdered nonfat milk
1/4 c. egg substitute (or egg whites)
1 1/2 T brown sugar
1/2 tsp baking soda
1 tsp pumpkin pie spice (1/2 tsp cinnamon + 1/4 tsp cloves + 1/4 tsp allspice)
3 T flour
Combine pumpkin, water, vanilla, milk, and egg. Add brown sugar. In a
separate bowl, stir together flour and spices, then add to pumpkin mixture.
Pour into a sprayed mini-loaf pan. Bake at 350F 30-35 minutes. Cool 10
minutes then remove from loaf pan.
2 servings, 135 calories each.
