This is one of my bravest attempts yet at recipe modification :-)
....and my 5yo liked it enough to eat for a few days! The original
was a flyer from Land's Sake, an organic farm in Weston, Mass. but
it has been vastly modified. If anyone tries it, can you give me
some feedback on the baking time please?
Fresh Strawberry Bread
1 pint (2 cups) fresh ripe strawberries
1 c all purpose flour
3/4c. whole wheat pastry flour
1 tsp baking soda
scant 1 tsp salt
1/4 tsp baking powder
1/2 cup sugar
1 large ripe banana (about 2/3 cup mashed maybe.. I'll measure next time)
2 egg whites, lightly beaten til frothy
1/3 cup water
Crush half the strawberries in a saucepan, and simmer over medium heat
2 minutes, stirring constantly. Slice rest of strawberries and mix w/the
cooked berries. Chill.
Preheat oven to 350F.
In a medium bowl combine all dry ingredients except the sugar.
In a larger bowl mash the banana. Mix the sugar in. Mix the egg whites
and water in.
Add flour mixture to wet ingredients. Blend well. Add strawberries
and pour into a nonstick bread pan (I used 2 small pans, next time
I would use one 8 1/2 x 4 1/2 pan).
Bake for 40 -) 1 hour or until toothpick inserted in center comes out clean.
(time is inexact because I used 2 small pans this time & it baked in about
25 minutes. I think it would be better in a larger pan, but I don't know
how long it will take... start testing after 40 minutes!).
Cool for about 10 minutes and gently pry off the sides and turn out onto
racks to cool.
