bruschetta-2 recipe

 BRUSCHETTA
 
 Find a 100% whole wheat flour baguette somewhere (or make it - or just use
 regular healthy bread of mild taste)
 3- 4 roma tomatoes chopped pretty small (seeded if you want)
 1 good sized roasted red bell pepper - chopped
 1 Tb balsamic vinegar (or more if you like)
 1 Tb fresh basil - minced
 1 ts Italian seasoning (rosemary,oregano,thyme...)
 Salt & pepper to taste
 fresh garlic cloves peeled & trimmed
 
 Mix all the together all ingredients (except bread)
 and let them sit for an hour or two at room temp. 
 to blend flavors.
 Make toast out of whatever kind of bread you use (I cut my baguette in 1/2"
 slices and toast on a cookie sheet under the broiler - turn and toast other
 side - but watch 'em closely - I usually burn a batch or two)
 Take your garlic cloves and rub them over your toast
 (like and eraser) - go easy unless you're not afraid 
 of garlic.
 Then top the toast with a spoonful of the tomato/pepper mixture and enjoy.
