My favorite pizza/calzone crust is just french bread dough. Here's
the recipe from Beard, more or less. [I've made a few changes to get
rid of fat]
Proof 1 pkg yeast and 1 T sugar in 1 c warm water. Add flour, 1 c at
a time, until a stiff dough is formed. roll dough in flour, put in a
bowl, and cover the bowl with plastic wrap. Leave in a warm
draft-free spot until doubled (~1 hour). Punch down and roll out for
pizza or calzone. Cover with toppings, and for calzones, fold over.
Bake at 400 degrees for ~ 1/2 hour, or until done.
