Beer Rye Bread
2 cups reconstituted nonfat milk
1/3 cup molasses
1/4 cup applesauce
10 oz. warm beer (use a bottle of a hearty brand, like
Beck's dark or Guinness stout, and then dispose of
the remaining 2 oz as you wish :) )
2 tbsp yeast
4 cups rye flour
3 cups ww flour
3+ cups bread flour
Warm milk (1 minute nuked); place in large bowl, add molasses,
applesauce, beer, yeast; mix. Add ww flour and one cup bread flour;
cover with a plate, let sit for 30 minutes. Stir down; add remaining
flour, knead 12 minutes, adding flour as necessary, or knead in food
processor. Place in nonstick dutch oven, cover, let sit 45 minutes.
Punch down, roll up, place in nonstick loaf pans, let rise 50 minutes.
Bake at 375 degrees F for 45 minutes, covering with foil for last 10
minutes.
