You will love these potato pancakes. I tried them in my waffle maker
sprayed with Pam and they came out really good.
APPLE-POTATO PANCAKES
1 1/4 cups unpeeled, finely chopped apples
1 cup peeled, grated potatoes
1/2 cup Natural Apple Sauce
1/2 cup all-purpose flour
2 egg whites
1 tsp. salt
Preheat oven to 475 degrees. Spray cookie sheet with nonstick cooking spray.
In medium bowl, combine apples, potatoes, 1/2 cup apple sauce, flour, egg
whites and salt.
Spray large nonstick skillet with nonstick cooking spray; heat over
medium heat until hot. Drop rounded TAB of batter 2 inches apart into
skillet. Cook 2 to 3 minutes on each side or until lightly browned. Place
pancakes on prepared cookie sheet.
Bake 10 to 15 minutes or until crisp. Serve with additional apple sauce
or apple slices, if desired. Refrigerate leftovers.
