Just invented this yesterday as a Sunday treat topped with fresh fruit:
Whole grain and Banana Pancakes
1 c ww pastry flour
1/2 c brown rice flour
1 tsp baking powder
1/2 tsp baking soda
1 T brown sugar
1/2 c ff plain yogurt
1 c water
1 egg white
1 banana, coarsely chopped
dash of nutmeg
combine dry ingredients. Beat egg white until frothy and whisk in the
yogurt and water. Combine wet and dry ingredients, mixing only until
moistened, adding a bit more water if necessary. fold in the banana pieces.
bake on a non-stick griddle (electric if possible) at about 375 degrees,
turning only once. Touch top, if it springs back they are done. Makes 12.

You don't eat a whole lot of thes4e, but they can be refrigerated, or frozen
for later toasting at another meal.
