I eat these little gems almost every morning. Sorry the measurements
aren't more exact, the recipe is *very* tolerant.
Breakfast cookies
1/3 cup ww flour (I use WW pastry flour)
1/3 cup (actually a bit less) wheat bran
large pinch baking soda
large pinch baking powder (I just shake a little bit of each in)
some water (1/6 cup?)
some honey (just a few squirts in a spoon)
half a handful of dried cranberries
Mix flour, bran, soda, and powder together in a cereal bowl. Add
remaining ingredients. Consistency should be about like cookies,
where you can drop them by the spoonful on a non-stick pan. A little
more liquidy works too (so they spread slightly after being dropped).
Bake at 350 about 12-15 minutes (sometimes I'm busy reading and just
let them go longer, 20 for example, and they are still delicious).
This is no added fat, and very little sugar. I also like them even
without honey, but I have awfully bland tastes at times.
It is nice to have a delicious little warm baked good for breakfast,
and this is as easy as any hot cereal.
