Breakfast Pilaf
I made the following for breakfast this morning for the first time and it
makes a fantastic (chewy, flavorful and filling) substitute for
processed breakfast cereals
1 cup Kashi pilaf (Seven Whole Grains and Sesame)*
1 cup water
1 cup juice (I used cranberry/grape from concentrate, no added sugars)
a handful of dried tropical fruit mixture - or just use raisins
In a 2-quart saucepan, bring the two cups of liquid to a rolling boil on
high heat. Pour 1 packet (1 cup) of Kashi into the boiling liquid.
Cover, turn heat down to medium (not simmer) and cook for 25 minutes or
until all the liquid is dissolved. Throw in a handful of dried fruit
mixture and top with your favorite vlf milk substitute or fruit juice (I
use Better Than Milk light). Makes four servings. Yum!
(Kashi is a mixture of 7 organic unprocessed/whole grains and sesame
seeds. The grains are whole oats, long grain brown rice, whole rye,
whole hard red winter wheat, whole triticale, whole buckwheat, whole
barley. I found it in the the hot cereal section of the grocery store
- I am not affiliated with the company in any way. Since it is simply
a mixture of whole grains, it can, obviously, also be used for savory
dishes at lunch or dinner.)
